The short answer? No, you definitely don’t!

In the days before refrigeration, that was a huge bonus as it meant the cake could be made well in advance and even saved for the first anniversary or christening.
It also looked impressive. Covered in marzipan and royal icing, a fruit cake had the structure to hold up the weight of elaborate decorations and multiple tiers.

Fast forward to today, and wedding cakes have evolved beautifully. You no longer have to stick to tradition, unless, of course, you want to. Many couples now opt for lighter, more modern flavours that suit their personalities and preferences.
